Can anybody recommender a good stir fry sauce, or a good recipe for it? I've got this stuff called "Kikoman Stir-Fry" sauce I got at the grocery store, but it's very meh. It's nowhere near as good as the kind of stuff they have at Chinese restaraunts. I'd like something better.

Around my house, Chinese oyster sauce is pretty much the default stir-frying sauce. It shouldn't be hard to find. My dad also makes spicy black bean sauce.

We generally use straighy soy sauce, but we season with ginger, curry powder, garlic, and other stuff.

I'm gonna agree with Leti, straight soy is good, I add some sake to it for some dishes, gekkikan or something like that, ten bucks for a big bottle, tastes kinda like cough syrup, but works great in cooking. I'm also a fan of Thai fish sauce, all the markets in my area carry it in the ethnic food section.

(and when in doubt, see what Alton Brown has to say)

I'm not a big fan of just soy sauce. Do you ahve a recipe for your seasoning stuff, or is it just by feel?

Alas, 90% of what I cook is just by feel.
